It seems that there's a newfound obsession with kale, at least in my social circle. It's new to me, as I've only started eating it in the last year. But I see it everywhere now. Steamed kale, sautéed kale, even kale chips. It's even making its way onto restaurant menus. And I guess you could say that I am drinking the kale Kool-Aid too. I have grown to love the nutrient packed green veggie wonder.
Kale is a form of cabbage and packed with vitamin K, C and beta carotene. It is what my Taiwanese mother would say, "very good for physical." Yes Mom it is! So I like to eat kale is soups and salads. In soups it's easy to cook it because I just add it to the simmering broth. But in a salad I find it very tough to eat it raw. So I steam the kale first, removing the leaves from the tough stems. I have this great food steamer from Black & Decker that I really like. I can cook a full dinner in this steamer all at once. I like to throw in a piece of fish and the kale, making sure to do it in steps if one item takes more time to steam cook than the other.
After steaming the kale, I dry it in my salad spinner, or paper towels will work just as well if you don't have one. Then I drizzle a little olive oil, freshly squeezed lemon juice, a few shavings of fresh Parmesan Reggiano cheese and salt and pepper to taste. That leaves me with a yummy salad that tastes hearty and makes me feel like I am eating something that is really good for me. Yum.
