Last summer my friend Kristen Beddard started a movement to bring her favorite green, kale, to Paris. Virtually unknown to Parisiennes, kale is now a little more ubiquitous to French foodies thanks to Miss Beddard. So much so that the NY Times wrote an article about Kristen and it appeared on the front page of the Sunday edition! I was lucky enough to be a part of the early days of The Kale Project as Kristen did an interview with me.
